Chocolate Mousse

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks with granulated sugar and vanilla extract until the mixture is pale and creamy.

    Combine Mixtures

    Gradually add the melted chocolate mixture to the egg yolk mixture, stirring until well combined.

    Beat Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip Cream

    In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully incorporated.

    Divide the mousse into serving dishes or cups and refrigerate for at least 2 hours or until set.

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

    Top the chilled chocolate mousse with a generous dollop of whipped cream just before serving.
