Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, shaking out any excess.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together using a microwave or a double boiler until smooth, stirring occasionally.

  3. 3

    Mix in Sugar and Vanilla

Once melted, remove the bowl from heat and whisk in granulated sugar until well combined. Add the vanilla extract and mix.

  4. 4

    Add Eggs and Flour

Whisk in the eggs and egg yolks one at a time, mixing well after each addition. Gently fold in the all-purpose flour and a pinch of salt until just combined.

Baking

  1. 5

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling each about 2/3 full.

  2. 6

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 7

    Cool Slightly

Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

  4. 8

    Invert and Serve

Invert each ramekin onto a plate to release the cake. Serve immediately with a scoop of vanilla ice cream and a dusting of powdered sugar.
