Marinating the Chicken
1. Prepare the Marinade
In a large mixing bowl, combine bourbon, soy sauce, brown sugar, minced garlic, minced ginger, black pepper, red pepper flakes, and olive oil. Whisk until the sugar is dissolved and the mixture is well combined.
2. Marinate the Chicken
Place the chicken breasts into a large resealable plastic bag or dish. Pour the marinade over the chicken, ensuring that all pieces are well coated. Seal the bag (or cover the dish) and refrigerate for at least 1 hour, or overnight for best results.
Cooking the Chicken
3. Grill the Chicken
Preheat your grill or a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
4. Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Cooking the Rice

While the chicken is marinating, rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
6. Cook the Rice
Once boiling, reduce the heat to low, cover, and let simmer for about 18-20 minutes (white rice) or 35-40 minutes (brown rice), or until all the water is absorbed and the rice is tender. Remove from heat and let it sit covered for an additional 5 minutes.
Serving
7. Plate the Dish
Slice the grilled chicken and serve it over a bed of the cooked rice. Garnish with chopped green onions for added flavor and presentation.
