Method

Preparing the Blackened Shrimp

    Step 1: Marinate the Shrimp

    In a mixing bowl, combine the shrimp, blackened seasoning, olive oil, and lemon juice. Toss to coat the shrimp evenly. Allow to marinate for at least 15 minutes.

    Step 2: Cook the Shrimp

    Preheat a grill or skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they are opaque and slightly charred. Remove from heat and set aside.

Cooking the Grits

    Step 3: Boil Water

    In a medium saucepan, bring the 4 cups of water to a boil. Add salt to the boiling water.

    Gradually add 1 cup of grits to the boiling water, stirring constantly to prevent lumps. Reduce heat to low and cover. Cook for 20-25 minutes, stirring occasionally, until the grits are creamy.

    Once the grits are cooked, stir in the butter and cheddar cheese until melted and well combined. Remove from heat and set aside.

    Step 6: Prepare the BBQ Butter

    In a small saucepan, melt the unsalted butter over low heat. Add Worcestershire sauce, hot sauce, minced garlic, paprika, and black pepper. Stir until well combined and heated through.

Assembly

    To serve, place a generous scoop of the cheesy grits on a plate. Top with the blackened shrimp and drizzle with the New Orleans BBQ butter. Enjoy!
