Prepare the Slaw
In a large bowl, combine the shredded cabbage, shredded carrot, chopped cilantro, rice vinegar, soy sauce, sesame oil, and salt. Toss until well combined. Set aside to let flavors meld.

Make the Sriracha Mayo
In a small bowl, mix together mayonnaise, sriracha sauce, and lime juice. Adjust spiciness according to your preference. Set aside.

Prepare the Shrimp
In a shallow bowl, combine flour and cornstarch. In another bowl, place the beaten egg. In a third bowl, add panko breadcrumbs. Dip each shrimp first in the flour mixture, then in the egg, and finally coat with panko breadcrumbs.

Fry the Shrimp
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Tacos
In each taco shell, add a generous amount of the Asian slaw, then top with fried shrimp. Drizzle with sriracha mayo and garnish with chopped green onions.
