    Prepare the Chicken Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels. This helps to achieve a crispy skin.

    Season the Wings

    In a large bowl, mix together olive oil, salt, black pepper, garlic powder, and paprika. Add the chicken wings to the bowl and toss until they are evenly coated with the seasoning.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C) and prepare your choice of wood chips for smoking (hickory or applewood work well).

    Smoke the Wings

    Place the seasoned chicken wings on the smoker rack. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

    Toss in Sauce

    Once the wings are done smoking, remove them from the smoker and toss them in your choice of Buffalo sauce, Carolina Gold BBQ sauce, or dry rub seasoning.
