Prepare the Beef Patties
In a large bowl, season the ground Angus beef with salt and black pepper. Mix gently and divide the beef into 8 equal portions. Form each portion into a small patty.

Cook the Patties
Heat olive oil in a skillet over medium-high heat. Once hot, add the patties and cook for about 3-4 minutes on one side until browned. Flip the patties and place a slice of American cheese on each. Cook for an additional 2-3 minutes until the cheese is melted and the patties are cooked to your desired doneness.

Toast the Buns
While the patties are cooking, slice the brioche buns in half and toast them in the skillet until golden brown.

Assemble the Sliders
Spread 1 tablespoon of IPA mustard on the bottom half of each toasted bun. Place a cheese-topped beef patty on each bun and top with the other half of the bun.

Serve
Serve the sliders warm with additional IPA mustard on the side if desired.
