Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once the pasta is cooked, drain it in a colander and set aside. Reserve a cup of pasta water for later use.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, chop the bell peppers, zucchini, carrot, and broccoli into bite-sized pieces. Halve the cherry tomatoes.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the bell peppers, zucchini, carrot, and broccoli. Cook for about 5-7 minutes until the vegetables are tender. Add the cherry tomatoes in the last minute of cooking.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Drizzle with the remaining 2 tablespoons of olive oil, and toss to combine. If the mixture seems dry, add a little reserved pasta water until desired consistency is reached.

    Season and Serve

    Season with salt and black pepper to taste. Toss in the grated Parmesan cheese until well combined. Serve immediately and enjoy your Pasta Primavera!
