For the Calamari

    Prepare the Squid

    Rinse the cleaned calamari under cold water and pat dry with paper towels. Set aside.

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

    Prepare Breading Station

    In a separate bowl, beat the eggs. In another bowl, place the breadcrumbs.

    Bread the Calamari

    Dip each calamari ring into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Place on a plate until all calamari are breaded.

    Heat Oil

    In a large, deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari in batches to the hot oil, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

For the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

    Add Tomatoes and Spices

    Stir in the crushed tomatoes, oregano, salt, black pepper, basil, and sugar. Bring to a simmer.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Serve

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
