Prepare the Fruit

    Cook the Fruit

    In a saucepan, combine black currants, raspberries, and 2 tablespoons of sugar over medium heat. Cook until the fruits soften and release their juices, about 5-7 minutes. Let it cool completely.

Make the Ice Cream Base

    Combine Ingredients

    In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, vanilla extract, orange blossom water, and a pinch of salt until sugar is dissolved.

    Chill the Base

    Cover the bowl and refrigerate for at least 2 hours or until completely chilled.

Melt the White Chocolate

    Prepare the Chocolate

    In a small saucepan, heat 1 tablespoon of heavy cream over low heat. Add white chocolate chips and stir until melted and smooth. Remove from heat and let cool slightly.

Mix and Freeze

    Combine Everything

    Once the ice cream base is chilled, combine it with the cooled fruit mixture. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.

    Swirl in White Chocolate

    During the last few minutes of churning, drizzle in the melted white chocolate to create swirls.

    Freeze

    Transfer the ice cream to a container and freeze for at least 4 hours or until firm.
