Brewing Process

Mash the Grains
In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the pale malt, caramel malt, and crystal malt and stir well. Maintain the temperature at 150-155°F (65-68°C) for 60 minutes.

Sparge
After the mash is complete, sparge the grains with hot water to collect about 6 gallons of wort.

Boil the Wort
Bring the wort to a boil. Add the bittering hops and boil for 60 minutes. Add aroma hops in the last 15 minutes of the boil.

Cool and Ferment
Cool the wort to about 70°F (21°C) and transfer it to a fermentation vessel. Pitch the ale yeast and seal the vessel. Allow fermentation for 1-2 weeks.

Add Blackberries
After primary fermentation, add the blackberries to the fermentation vessel. Allow to ferment for an additional week.

Bottle the Ale
After fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the ale. Bottle the beer and let it carbonate for 1-2 weeks.
