Pot Roast

    Sear the Roast

    Season the chuck roast with salt and black pepper on all sides. In a large skillet, heat the olive oil over medium-high heat. Sear the roast for 3-4 minutes on each side until browned.

    Prepare the Slow Cooker

    Transfer the seared roast to a slow cooker. Add beef broth, chopped onion, carrots, celery, minced garlic, thyme, and bay leaves.

    Cook the Roast

    Cover and cook on low for 8 hours or until the roast is tender and easily shredded with a fork.

Garlic Mashed Potatoes

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, salt, and black pepper. Mash until smooth and creamy.

Mushroom Gravy

    Sauté the Mushrooms

    In a saucepan, melt butter over medium heat. Add sliced mushrooms and cook until softened, about 5 minutes.

    Make the Gravy

    Stir in flour and cook for 1 minute. Gradually whisk in beef broth and soy sauce, then season with black pepper. Cook until thickened, about 5-7 minutes.

Green Beans

    Cook the Green Beans

    In a pot of boiling salted water, add the trimmed green beans and cook for 5-7 minutes until tender but still crisp.

    Sauté with Butter

    Drain the green beans and return them to the pot. Add butter, salt, and black pepper. Toss to coat and heat through.

Fried Onion Strings

    Prepare the Onions

    Soak the thinly sliced onion in buttermilk for at least 30 minutes.

    Fry the Onion Strings

    In a shallow dish, coat the soaked onion strings with flour. In a deep skillet, heat vegetable oil over medium-high heat and fry the onions until golden and crispy, about 2-3 minutes. Drain on paper towels.

Garlic Bread

    Prepare the Garlic Butter

    In a small bowl, mix softened butter with minced garlic and chopped parsley.

    Toast the Bread

    Spread the garlic butter on the sliced French bread. Place under the broiler for 2-3 minutes until golden and toasted.
