    Marinate the Chicken

    In a bowl, combine chicken breasts and mojo marinade. Ensure each piece is fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for best results.

    Prepare the Salsa

    Finely chop the red onion, cilantro, and tomato. In a bowl, mix the chopped ingredients with lime juice, salt, and pepper to taste. Set aside to allow flavors to meld.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from marinade and discard the marinade. Place chicken breasts on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.

    Assemble the Dish

    On a serving plate, layer the grilled chicken, lettuce, tomato slices, and shredded cheese. Top with freshly made salsa. Serve with tortilla chips on the side.
