Fajita Filling

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and onion, and sauté for about 5-7 minutes until they soften.

    Add Garlic and Spices

    Add the minced garlic, cumin, chili powder, salt, and black pepper to the skillet. Stir well and cook for an additional 2-3 minutes until fragrant.

Black Beans

    Prepare the Black Beans

    In a small saucepan, drain and rinse the canned black beans. Add them to the saucepan along with cumin and salt. Heat over medium heat until warmed through, about 5 minutes.

White Rice

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the white rice and salt. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Wrap Assembly

    Assemble the Wraps

    Lay a flour tortilla flat on a plate. Spread a spoonful of sour cream in the center, followed by a portion of the sautéed vegetables, black beans, rice, shredded cheese, lettuce, and diced tomato. Fold in the sides and roll up the tortilla tightly to form a wrap.

    Serve

    Cut the wraps in half if desired and serve immediately with extra sour cream or salsa on the side.
