Marinade

Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a large bowl, combine fresh lime juice, minced garlic, chopped cilantro, olive oil, cumin, salt, and black pepper. Mix well.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade. Ensure each piece is well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

BBQ Sauce Preparation

  1. 3

    Mix the BBQ Sauce

In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and salt. Stir over medium heat until the sugar dissolves and the sauce is heated through.

  2. 4

    Simmer the Sauce

Let the BBQ sauce simmer for about 10 minutes, stirring occasionally. Remove from heat and set aside.

White BBQ Sauce Preparation

  1. 5

    Prepare the White BBQ Sauce

In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, salt, and black pepper until smooth and creamy.

Cooking the Chicken

  1. 6

    Grill or Bake the Chicken

Preheat your grill or oven to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill or bake the chicken breasts for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).

  2. 7

    Baste with BBQ Sauce

During the last few minutes of cooking, brush the chicken breasts with the prepared BBQ sauce, allowing it to caramelize slightly.

Serving

  1. 8

    Serve the Chicken

Remove the chicken from the grill or oven, and let it rest for 5 minutes. Serve with a drizzle of white BBQ sauce on top.
