Method
Chicken Preparation

Marinate the Chicken
In a bowl, combine the buttermilk, cayenne pepper, paprika, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate in the refrigerator for at least 2 hours or overnight.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove marinated chicken from the fridge, dredge in flour, and carefully place in hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Cook the Greens
In a large pot, sauté chopped onion and minced garlic until translucent. Add the collard greens, chicken broth, apple cider vinegar, salt, and black pepper. Bring to a simmer and cook for about 30 minutes until greens are tender.
Alabama Hot Chicken Sauce Preparation

Make the Sauce
In a small bowl, mix cayenne pepper, paprika, brown sugar, hot sauce, and vegetable oil until well combined. Adjust seasoning to taste.
Assembly

Plate the Dish
On a platter, serve the fried chicken breast over a bed of smoked Gouda cheese grits. Top generously with Mrs. Mary’s greens and drizzle with Alabama Hot Chicken sauce.
