Prepare the Vinaigrette
In a small bowl, whisk together 1/4 cup maple syrup, 2 tablespoons apple cider vinegar, 1/4 cup olive oil, salt, and pepper to taste. Set aside.

Toast the Walnuts
In a dry skillet over medium heat, toast the walnuts for 3-5 minutes until fragrant, stirring occasionally. Be careful not to burn them.

Cook the Bacon
Cook the bacon slices in a skillet until crispy. Remove from heat, allow to cool, and chop into bite-sized pieces.

Prepare the Salad
In a large salad bowl, combine the mixed greens, parsnips, carrots, radishes, fennel, red onion, toasted walnuts, croutons, and bacon. Toss gently to combine.
