Pasta Preparation

    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the herb pappardelle noodles and cook according to package instructions until al dente. Drain and set aside.

Vegetable Sauté

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add zucchini, bell pepper, carrot, and mushrooms. Sauté for about 5-7 minutes until tender. Add spinach and cook until wilted. Season with salt and pepper.

Mornay Sauce Preparation

    Make the Mornay Sauce

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk, whisking continuously until the sauce thickens. Remove from heat and stir in cheddar cheese, Parmesan, nutmeg, salt, and pepper.

Combine and Serve

    Combine and Serve

    In a large bowl, combine the cooked noodles, sautéed vegetables, and Mornay sauce. Toss well to coat. Serve with a side salad made of mixed greens, cherry tomatoes, cucumber, olive oil, balsamic vinegar, and season with salt and pepper.
