Prepare the Filet Mignon
Season the filet mignon on both sides with salt and black pepper. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare. Adjust cooking time according to your preference.

Cook the Asparagus
In another pan, heat 1 tablespoon of olive oil over medium heat. Add asparagus and sauté for about 5-7 minutes until tender-crisp. Season with salt and pepper to taste.

In a bowl, combine mixed greens and cherry tomatoes. Drizzle with balsamic vinaigrette and toss gently.

Plate the filet mignon alongside a generous serving of mashed potatoes and asparagus. Add the side salad to the plate and serve immediately.
