Prepare the Bacon
In a skillet over medium heat, cook the double smoked bacon until crispy. Remove and place on paper towels to drain excess fat.

Form the Patties
In a bowl, season the ground beef with salt and pepper. Form into two equal-sized patties.

Cook the Patties
In the same skillet used for bacon, cook the beef patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness.

Add Cheese
During the last minute of cooking, place a slice of muenster cheese on each patty to melt.

Prepare the Tomatoes
While the patties are cooking, slice the roma tomato into thick slices.

Assemble the Burger
On the bottom half of a brioche roll, spread bistro sauce, add the cooked patty with melted cheese, top with crispy bacon, thick tomato slices, and arugula. Place the top half of the roll to finish.

Serve
Serve the burgers with a side of chips.
