Sandwich Preparation

    Prepare the Bistro Potatoes

    Start by preheating your oven to 400°F (200°C). Cut your desired potatoes into bite-sized pieces, toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy and golden.

    Fry the Eggs

    In a non-stick skillet over medium heat, crack the eggs and fry them to your preferred doneness. Season with salt and pepper.

    Assemble the Sandwich

    On one slice of house bread, layer the pepper jack cheese, followed by the fried eggs, sharp white cheddar cheese, and cilantro. Top with the second slice of bread.

    In the same skillet, add a little butter or oil and grill the sandwich on both sides until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
