Prepare the Crust
Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Gradually add in the granulated sugar and mix until well combined. Add the sour cream, vanilla extract, and eggs, one at a time, mixing well after each addition until the mixture is smooth and creamy.

Bake the Cheesecake
Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

Chill and Serve
Cover the cheesecake and refrigerate for at least 4 hours, preferably overnight, before removing from the springform pan. Slice and serve chilled.
