Prepare the Gelatin Mixture
In a medium saucepan, combine the water and monk fruit sweetener. Sprinkle the unflavored gelatin over the water and let it sit for about 5 minutes to allow the gelatin to bloom.

Heat the Mixture
Place the saucepan over low heat and stir gently until the gelatin and sweetener dissolve completely. Do not let it boil.

Add Fruit Juice and Citric Acid
Once the mixture is smooth, remove it from the heat and stir in your choice of fruit juice and citric acid. If using, add natural flavoring at this point.

Mold the Gummy Bears
Pour the mixture into gummy bear molds, filling each cavity. Allow the mixture to cool to room temperature.

Refrigerate
Once cooled, transfer the molds to the refrigerator and let them set for at least 1-2 hours until firm.

Carefully remove the gummy bears from the molds and store them in an airtight container in the refrigerator.
