Burger Patty

    Prepare the Patty

    In a mixing bowl, combine ground beef, salt, black pepper, and garlic powder. Mix gently until just combined.

    Form the Patties

    Shape the mixture into two equal patties, making a slight indentation in the center of each to prevent puffing during cooking.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until the internal temperature reaches 160°F (70°C).

    Add Cheese

    During the last minute of cooking, place a slice of fontina cheese on each patty and cover to melt.

    Assemble the Burger

    Once the patties are cooked, remove them from the heat. Spread marrow butter on the bottom of the burger buns.

    Place the cooked patty on the bottom bun, add a generous spoonful of giardiniera relish, a handful of crispy fried onions, and drizzle with ketchup and aioli to taste.

    Place the top bun on the burger and press down gently.

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries.

    Fry the Potatoes

    Heat oil in a deep fryer or a large saucepan to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 3-4 minutes.

    Season the Fries

    Remove fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil, and season with salt and black pepper.
