Method
Meatballs
Prepare the Meatball Mixture
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, minced garlic, chopped parsley, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Form the Meatballs
Using your hands, form the mixture into meatballs about the size of a golf ball. Place them on a plate or a baking sheet.
Cook the Meatballs
In a large skillet, heat the olive oil over medium heat. Once hot, add the meatballs and cook for about 8-10 minutes, turning occasionally, until they are browned on all sides and cooked through.
Radicchio Agrodolce
Prepare the Agrodolce
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped radicchio and sauté for about 5 minutes until wilted.
Add Vinegar and Honey
Pour in the red wine vinegar and honey. Stir well and let it simmer for another 5 minutes until the liquid reduces slightly.
Season the Agrodolce
Season the radicchio with salt and black pepper to taste. Remove from heat and set aside.
Serving
Plate the Dish
To serve, place a generous helping of the radicchio agrodolce on a plate. Top with the cooked meatballs.
Garnish
Sprinkle the grated pecorino cheese over the meatballs and radicchio before serving.
