In a large mixing bowl, combine the whole milk and heavy cream. Whisk together until well blended.

Gradually add the granulated sugar and salt to the milk and cream mixture, whisking continuously until the sugar is fully dissolved.

Add the vanilla extract to the mixture and whisk until combined.

Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or overnight for best results.

After chilling, decide the flavor of your gelato. You can create chocolate, fruit, or coffee gelato.

If making chocolate gelato, stir in the melted chocolate. For fruit, fold in the pureed fruit. For coffee, mix in the brewed coffee.

Churning the Gelato
