Steak Preparation

    Season the Steak

    Generously season both sides of the strip steaks with salt and black pepper.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the strip steak and sear for 3-4 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Roasting Oyster Mushrooms

    Prepare the Mushrooms

    Preheat the oven to 400°F (200°C). Clean the oyster mushrooms by gently wiping them with a damp cloth.

    Season the Mushrooms

    In a bowl, toss the mushrooms with minced garlic, thyme, olive oil, salt, and black pepper until evenly coated.

    Roast the Mushrooms

    Spread the mushrooms on a baking sheet and roast in the preheated oven for 15-20 minutes, or until golden and tender.

Making Marrow Butter

    Prepare the Marrow

    Preheat the oven to 450°F (230°C). Place the bone marrow in a baking dish and roast for about 15-20 minutes until it is soft and slightly bubbly.

    Make the Butter Mixture

    In a bowl, combine the roasted marrow, softened butter, minced shallot, chopped parsley, lemon juice, and salt. Mix until well combined.

    Chill the Marrow Butter

    Transfer the marrow butter to parchment paper, roll it into a log, and refrigerate until firm.

Preparing Crispy Potatoes

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add baby potatoes and cook for about 10-12 minutes until fork-tender.

    Crisp the Potatoes

    Drain the potatoes and let them steam dry for a few minutes. In the same pot, heat olive oil over medium heat, add the potatoes, and sprinkle with salt, black pepper, and rosemary. Cook until crispy and golden, about 8-10 minutes.
