Preparation

    Prepare the Vegetables

    Finely chop the poblano pepper and cipollini onions. Slice the mushrooms into thin pieces.

    Cook the Meats

    In a large skillet over medium heat, add the pork sausage and bacon. Cook until the sausage is browned and the bacon is crispy, about 8-10 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped poblano, cipollini onions, and mushrooms. Sauté for about 5-7 minutes until they are tender.

    Combine Ingredients

    Return the cooked sausage and bacon to the skillet with the vegetables. Pour in the tomato sauce and stir to combine. Let it simmer for 10 minutes, allowing the flavors to meld.

    Add Cheese

    Grate or slice the provolone cheese and add it to the skillet. Stir until the cheese is melted and everything is well combined.
