Prepare the Garlic Chips
Peel and thinly slice 6 garlic cloves. In a small skillet, heat oil over medium heat. Add garlic slices and fry until golden brown. Remove and drain on paper towels.

Roast the Garlic
Wrap the remaining garlic cloves in aluminum foil with a drizzle of olive oil. Roast in a preheated oven at 400°F (200°C) for about 30-35 minutes until soft.

Prepare the Fresno Peppers
Slice the Fresno peppers in half lengthwise and remove the seeds. Set aside.

Cook the Chicken Sausages
In a large skillet, heat a little olive oil over medium heat. Add the chicken sausages and cook for about 8-10 minutes, turning until browned and cooked through.

Melt the Fontina
Once the sausages are cooked, lower the heat and place the Fontina cheese on top of the sausages. Cover the skillet and let the cheese melt for about 3-5 minutes.

Plate the Dish
On a serving platter, place the cooked chicken sausages topped with melted Fontina. Garnish with sautéed Fresno peppers and crispy garlic chips. Drizzle the salmoriglio sauce over the top.
