Method

Preparation

  1. 1

    Prepare the Lettuce

Wash the heirloom romaine lettuce thoroughly under cold water to remove any dirt. Dry the leaves using a salad spinner or by patting them with paper towels. Tear the lettuce into bite-sized pieces and place in a large bowl.

  2. 2

    Toast the Caraway Seeds

In a small, dry skillet over medium heat, toast the caraway seeds for about 2-3 minutes, stirring frequently until they become fragrant. Remove from heat and allow to cool slightly before adding to the salad.

Dressing Preparation

  1. 3

    Mix the Dressing

In a medium bowl, whisk together the grated parmesan cheese, olive oil, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, salt, and black pepper until smooth and well combined.

Assembly

  1. 4

    Combine Salad Ingredients

Add the toasted caraway seeds to the bowl of romaine lettuce. Pour the dressing over the lettuce and toss gently to coat all the leaves evenly.

  2. 5

    Add Toppings

Sprinkle the focaccia crumbs over the dressed salad. Toss lightly to combine the crumbs with the salad without breaking them down too much.

Serving

  1. 6

    Serve

Transfer the Caesar salad to a serving platter or individual plates. Optionally, garnish with extra grated parmesan and a sprinkle of black pepper. Serve immediately.
