    Wash and peel the Yukon Gold potatoes. Cut them into thin slices, about 1/8 inch thick, to ensure even cooking.

    In a large pot, bring salted water to a boil. Add the sliced potatoes and cook for about 5-7 minutes until they are just tender but not mushy. Drain and set aside.
