    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the tagliolini and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Ragú Bolognese

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Meat and Garlic

    Add the ground beef and pork to the skillet. Cook until browned, breaking up the meat with a spoon. Stir in the minced garlic and cook for an additional minute.

    Deglaze with Wine

    Pour in the red wine and let it simmer for about 2-3 minutes until slightly reduced.

    Add Tomatoes and Season

    Stir in the crushed tomatoes, salt, and black pepper. Bring to a simmer, then reduce heat to low. Cover and let it cook for at least 30 minutes, stirring occasionally.

    Add the cooked tagliolini to the ragú and toss to combine, ensuring the pasta is well coated with the sauce.
