Prepare the Olives

Using a small knife, carefully stuff each pitted olive with a small amount of nduja, ensuring they are well-filled but not bursting.

Breading Station

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Coat the Olives

Dip each stuffed olive first in the flour, then in the beaten eggs, and finally coat with breadcrumbs. Make sure they are fully covered.

Fry the Sage

In a frying pan, heat a small amount of olive oil over medium heat. Add sage leaves and fry until crispy, then remove and set aside.

Fry the Olives

In the same pan, heat enough olive oil for deep frying. Once hot, carefully add the breaded olives in batches, frying until golden brown (about 3-4 minutes).

Drain and Serve

Remove the fried olives from the oil and drain on paper towels. Serve warm, garnished with crispy sage and lemon wedges on the side.
