Spinach & Ricotta Lasagnette Recipe

    Prepare the Spinach Filling

    In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.

    Combine Filling Ingredients

    In a mixing bowl, combine the cooked spinach, ricotta cheese, salt, and black pepper. Mix well until combined and set aside.

    Prepare the Tomato Sugo

    In a saucepan, prepare tomato sugo by simmering crushed tomatoes with a pinch of salt and olive oil for about 15 minutes. Adjust seasoning to taste.

    Layer the Lasagnette

    Preheat the oven to 180°C (350°F). In a baking dish, spread a thin layer of tomato sugo on the bottom. Layer 3 lasagna sheets, followed by half of the spinach and ricotta mixture, then a layer of tomato sugo. Repeat the layers ending with lasagna sheets topped with remaining tomato sugo.

    Add Cheese and Bake

    Sprinkle grated parmesan cheese over the top layer of the lasagna. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbling.

    Serve

    Let the lasagnette cool for a few minutes before slicing. Serve warm, garnished with additional parmesan if desired.
