Prepare the Porchetta
Preheat your oven to 300°F (150°C). In a food processor, combine rosemary, sage, garlic, fennel seeds, salt, and black pepper to create a seasoning paste. Rub this mixture all over the pork belly, ensuring it's well coated. Roll the pork belly tightly and tie it with kitchen twine to secure it.

Roast the Porchetta
Place the rolled pork belly on a roasting rack in a baking dish. Roast it in the preheated oven for about 3 hours, or until the internal temperature reaches 190°F (88°C). Let it rest for at least 30 minutes before slicing.

Assemble the Sandwich
Slice the ciabatta rolls in half. Layer slices of porchetta, provolone cheese, pickled shallots, salsa verde, and mixed greens on the bottom half of each roll. Top with the other half of the roll.

Serve
Serve the sandwiches immediately, optionally with extra salsa verde on the side.
