Focaccia Dough

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture along with 1/4 cup of olive oil. Mix until a sticky dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Onion and Rosemary
While the dough is rising, thinly slice the yellow onion and chop the fresh rosemary.

Shape Focaccia
After the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch and spread the dough to fit the sheet.

Second Rise
Cover the focaccia with a cloth and let it rise for another 30 minutes.

Preheat Oven
Preheat your oven to 425°F (220°C).

Bake Focaccia
Bake in the preheated oven for 20-25 minutes or until golden brown.

Cool and Serve
Remove from the oven, let it cool slightly, then cut into squares and serve warm.
