    Prepare the Potatoes

    Wash the fingerling potatoes and cut them in half lengthwise. In a pot, bring salted water to a boil and add the potatoes. Cook for about 15 minutes or until tender. Drain and set aside.

    Prepare the Leeks

    Trim the leeks and slice them into thin rounds. Rinse under cold water to remove any dirt. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the leeks and sauté until softened, about 5-7 minutes. Set aside.

    Make the Meyer Lemon Salsa Verde

    In a bowl, combine the juice of 2 Meyer lemons, chopped parsley, minced garlic, salt, black pepper, and remaining olive oil. Mix well and adjust seasoning to taste.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Brush the swordfish steaks with olive oil and season with salt and pepper. Grill the steaks for about 4-5 minutes per side or until cooked through and grill marks appear.

    Serve

    On each plate, arrange the sautéed leeks and fingerling potatoes. Top with the grilled swordfish and drizzle with Meyer lemon salsa verde. Enjoy!
