    Prepare the Vegetables

    In a large bowl, combine the sliced carrots, cauliflower florets, green bell pepper, and celery. Add the minced garlic and red pepper flakes and toss to combine.

    Make the Brine

    In a saucepan, combine white vinegar, water, sugar, and salt. Heat over medium heat until the sugar and salt dissolve, then remove from heat.

    Combine Ingredients

    Pour the brine over the vegetable mixture and add the olives. Stir to combine and make sure the vegetables are submerged.

    Add Oil and Oregano

    Drizzle olive oil over the mixture and sprinkle dried oregano on top. Mix well.

    Jar the Giardiniera

    Transfer the mixture to clean jars, ensuring the vegetables are packed tightly. Seal the jars and refrigerate.

    Let it Pickle

    Allow the giardiniera to pickle in the refrigerator for at least 24 hours before serving for the best flavor.
