    Roast the Garlic

    Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and a pinch of salt. Roast in the oven for 30-35 minutes, or until soft and fragrant.

    Prepare the Sourdough

    While the garlic is roasting, preheat a grill or grill pan over medium heat. Brush each slice of sourdough bread with olive oil on both sides.

    Grill the Bread

    Place the oiled sourdough slices on the grill. Grill for about 2-3 minutes on each side, or until golden brown and crispy.

    Mash the Garlic

    Once the garlic is done roasting, unwrap it and let it cool slightly. Squeeze the roasted garlic out of the skins into a bowl and mash it with a fork.

    Assemble the Fett'unta

    Spread the mashed roasted garlic evenly over the grilled sourdough slices. Drizzle with additional olive oil, season with salt and black pepper, and sprinkle with chopped fresh parsley before serving.
