Prepare the Guanciale
Cut the guanciale into small strips or cubes. Heat the olive oil in a large skillet over medium heat, and add the guanciale. Cook until crispy and golden, about 5-7 minutes.

Add Tomatoes and Chili
Add the canned tomatoes to the skillet, breaking them up with a spoon. Stir in the red chili flakes and season with salt. Let the sauce simmer for about 15 minutes, stirring occasionally.

Cook the Bucatini
While the sauce is simmering, bring a large pot of salted water to a boil. Add the bucatini and cook according to package instructions until al dente, usually around 9-11 minutes.

Combine Pasta and Sauce
Once the bucatini is cooked, reserve a cup of pasta water and drain the rest. Add the drained pasta to the skillet with the sauce. Toss everything together, adding reserved pasta water as needed to reach desired sauce consistency.

Serve the pasta hot, topped with grated Pecorino Romano cheese and a sprinkle of black pepper.
