In a medium saucepan, bring water to a boil. Add the lobster tail and cook for about 5-7 minutes until the meat is opaque and cooked through. Remove from water, let cool slightly, then remove the meat from the shell and chop into bite-sized pieces.

In a mixing bowl, whisk the eggs and heavy cream together until well combined. Season with salt and black pepper. Pour the mixture into a non-stick skillet over low heat. Stir gently with a spatula until the eggs are soft and creamy, about 5-7 minutes.

Once the eggs are cooked to your desired consistency, fold in the lobster meat, chives, and lemon zest. Cook for an additional 1-2 minutes until everything is warmed through. Serve immediately, garnished with additional chives if desired.
