Instructions
Prepare the Dough
In a large bowl, combine warm water and yeast. Let sit for about 5 minutes until foamy.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
First Rise
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Prepare the Pan
Preheat your oven to 425°F (220°C). Grease a baking sheet or a focaccia pan with olive oil.
Add Beans and Cheese
Gently press the canned beans onto the surface of the dough and sprinkle with Parmesan cheese if using.
Second Rise
Cover the pan with a cloth and let the focaccia rise for another 20-30 minutes.
Bake
Drizzle the top with olive oil and sprinkle with salt. Bake in the preheated oven for 20-25 minutes or until golden brown.
Cool and Serve
Remove from oven, let cool slightly, then cut into squares and serve warm.
