Combine the Dairy

In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and cocoa powder. Heat over medium heat, stirring frequently, until the mixture is hot but not boiling.

Melt the Chocolate

Remove the saucepan from heat and add the chopped dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

Mix the Cornstarch

In a small bowl, whisk together the cornstarch and a few tablespoons of the hot chocolate mixture until smooth. This will prevent lumps when you add it to the saucepan.

Combine Egg Yolks

In another bowl, whisk together the egg yolks, vanilla extract, and sea salt. Gradually whisk in the cornstarch mixture.

Temper the Egg Yolks

Slowly whisk a little of the hot chocolate mixture into the egg yolk mixture to temper it, then gradually whisk the tempered mixture back into the saucepan.

Thicken the Budino

Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

Chill

Pour the budino into individual serving cups or bowls. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Serve

Once set, serve the dark chocolate budino chilled, optionally topped with whipped cream or chocolate shavings.
