Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until the dough comes together. Knead the dough for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Prepare the Crab Filling
In a bowl, mix together the crab meat, cream cheese, green onions, lemon juice, Old Bay seasoning, salt, and pepper until well combined.
Roll Out the Dough
After resting, roll out the dough on a floured surface until it's thin (about 1/8 inch thick). Cut into squares or circles.
Fill the Ravioli
Place a small spoonful of crab filling in the center of each square. Moisten the edges with water, fold over, and seal tightly. Repeat until all filling is used.
Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes or until they float to the top. Remove with a slotted spoon and set aside.
Make the Sauce
In a saucepan over medium heat, melt the butter and sauté the garlic until fragrant. Add the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted. Add salt and pepper to taste.
Serve
Plate the ravioli and drizzle with the sauce. Garnish with fresh parsley before serving.
