Cider Preparation
Prepare the Pears
Wash and core the pears, then chop them into small pieces.
Juicing
In a large pot, combine the chopped pears and water. Simmer over low heat for about 30 minutes, mashing the pears occasionally until they are soft. Strain the mixture through a fine mesh strainer or cheesecloth to extract the juice into a fermentation vessel.
Add Ingredients
To the pear juice, add sugar, acid blend, pectic enzyme, and crushed Campden tablets. Stir well to dissolve.
Yeast Addition
Allow the juice to cool to room temperature. Once cooled, sprinkle the yeast over the surface of the juice and gently stir to mix.
Fermentation
Seal the fermentation vessel with an airlock and place it in a cool, dark area. Allow it to ferment for 1-2 weeks, or until fermentation has slowed significantly.
Chill & Serve
Refrigerate the bottles to chill. Serve cold and enjoy your homemade Perry cider!
