Prepare the Ingredients

Chop the onion, green peppers, and garlic. Peel and dice the potatoes.

Sear the Lamb

In a large pot, heat the olive oil over medium-high heat. Add the lamb cubes and sear until browned on all sides, about 5-7 minutes.

Add Vegetables

Add the chopped onion, green peppers, and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

Add Potatoes and Seasoning

Stir in the diced potatoes, salt, black pepper, thyme, paprika, and bay leaves.

Add Broth and Simmer

Pour in the lamb broth. Bring to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, until the lamb is tender.
