Prepare the Filling
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
Stir in the flour and cook for about 2 minutes, stirring constantly to make a roux.
Gradually whisk in the milk, ensuring there are no lumps. Cook until the mixture thickens.
Add the shredded chicken, salt, black pepper, and nutmeg. Mix well and remove from heat. Let it cool.
Form the Croquetas
Once the filling is cool enough to handle, shape it into small logs or balls.
Dredge each croqueta in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
Fry the Croquetas
Heat oil in a deep pan over medium-high heat. Fry the croquetas in batches until golden brown on all sides.
Remove from the oil and place on paper towels to drain excess oil. Serve hot.
