Brewing Instructions

Prepare the Ginger

Peel and slice the fresh ginger root into thin pieces. Set aside.

Mix Honey and Water

In a large pot, combine the honey and water. Heat gently until the honey is fully dissolved. Do not boil.

Add Ginger and Spices

Add the sliced ginger, cinnamon sticks, cloves, and nutmeg to the honey-water mixture. Allow it to simmer for about 10 minutes.

Cool the Mixture

Remove the pot from heat and let the mixture cool to room temperature.

Fermentation Setup

Once cooled, pour the mixture into a sanitized fermentation vessel. Add the lemon juice and sprinkle the yeast on top.

Seal and Store

Seal the fermentation vessel with an airlock and store it in a dark, cool place for about 2 to 4 weeks.

Bottling

After fermentation is complete, siphon the mead into sanitized bottles, leaving some space at the top. Seal the bottles.

Aging

Store the bottles in a cool, dark place for at least 3 months to age before enjoying.
