Prepare the Ingredients

Slice the onions and pimientos. Set aside.

Cook the Chorizo

In a skillet over medium heat, add the chorizo links. Cook for about 10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and let rest before slicing.

Sauté the Vegetables

In the same skillet, add olive oil. Once heated, add the sliced onions and cook until translucent, about 5 minutes. Add the pimientos and season with salt and pepper. Sauté for an additional 3-4 minutes until softened.

Assemble the Sandwiches

Slice the French rolls in half. Place a portion of the sliced chorizo on the bottom half of each roll. Top with the sautéed onions and pimientos. Close the sandwiches.

Serve the chorizo sandwiches warm, with optional sides like chips or salad.
