Prepare the Rice

In a large saucepan, combine the Arborio rice, whole milk, sugar, cinnamon stick, and salt. Bring to a gentle boil over medium heat, stirring frequently.

Cook the Mixture

Once it reaches a boil, reduce the heat to low and let it simmer uncovered for about 30-35 minutes, stirring often until the rice is tender and the mixture thickens. Remove the cinnamon stick.

Add Vanilla and Butter

Stir in the vanilla extract and butter until fully incorporated.

Chill the Pudding

Transfer the rice pudding to a serving dish or individual bowls. Cover and refrigerate for at least 2 hours, or until chilled.

Before serving, sprinkle with ground cinnamon on top for garnish.
